The cooked mixture is then dried to obtain tarhana.
Since the yogurt used in making tarhana is not cooked, it contains live probiotic bacteria.
At the same time, the cracked wheat used in production becomes a functional food ingredient along with the probiotics it contains.
The fibrous structure of wheat is the most important factor that makes tarhana one of the easily digestible foods.
In this regard, 100 grams of tarhana contains approximately 133 calories.
